Pumpkin Penuche Goodness

I think one of the most underrated holiday desserts are homemade cookies! Pies and cakes and pumpkin rolls are all delicious, but I think it's great to have homemade cookies to munch on in between meals :) What better festive Thanksgiving cookie is there besides a yummy little pumpkin cookie? Lucky for you I have a super easy-to-make recipe for all your Thanksgiving festivities - Pumpkin Cookies with Penuche Frosting. These little cookies are one of my hands down, absolute favorite, home made cookies EVER! Warning: they are super addicting, so be prepared to devour more than one!
Calories don't count on the holidays, right? Because that's my motto ;)

Ingredients for the Pumpkin Cookies:
1/2 cup Sugar
1/2 cup Brown Sugar
1 cup Margarine or Butter, softened
1 cup canned Pumpkin
1 tsp Vanilla
1 egg
2 cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
1/4 tsp Salt
1/2 cup Mini Chocolate Chips (Optional, but I prefer to use them)
Ingredients for the Penuche Frosting:
3 tbsp Margarine or Butter, softened
1/2 cup Brown Sugar
1/4 cup Milk
2 cups Powdered Sugar
This recipe is so ridiculously easy, it's hard to believe how amazing these cookies taste!
This recipe yields about 4-5 dozen, depending on how big you decide to make them.




First, preheat the oven to 350 degrees Fahrenheit.
Next, mix all of the cookie ingredients together. There's no specific order, just mix them all together!
Then begin to scoop little cookie dough balls on cookie sheets. Make sure to spray the pan with cooking oil before!
Once you have the cookie sheets filled with the soon-to-be little pumpkin cookies, place them in the oven and let them bake for 10 minutes. Remove and let cool entirely before frosting.
When the cookies are baking, begin to make the Penuche frosting.
Mix all frosting ingredients together to get a thick frosting.
When the cookies are completely cooled off, begin frosting!
And voila! Perfect little pumpkin cookies with Penuche frosting. Your friends and family won't be able to get enough of them!
